Ingredients:
4 Ounces Baby Spinach
4 Ounces Baby Arugula
1/2 Cup Balsamic Vinegar
1/2 Cup Walnuts
1 Cup Blueberries
1-2 Granny Smith Apples Sliced
1/2 Cup Feta Cheese Crumbled
Method:
Place vinegar in a small pot and bring to a simmer. Simmer for about 10 minutes or until you can coat the back of a spoon. Be careful not to burn. Remove from heat and allow to cool. You should have a nice syrup consistency.
Arrange the other ingredients in bowls or plates. Drizzle with the vinegar syrup and serve!
